  • In the end add 2 lemons cut in wedges.

Bring A Taste Of Mexico To Your Kitchen With Chicken Tostadas

One great Mexican recipe is chicken tostadas, which is a traditional Mexican dish made from toasted or fried tortillas. Tortillas are flat unleavened breads made with wheat or corn flour, salt and water. There are numerous ways of preparing chicken Tostadas and the best thing about them is that they are very easy to prepare; full of flavor and offer numerous health benefits.

Just pick up a few prepared foods, like rotisserie chicken, combine it with fresh items and you will have this great meal in a few minutes. Chicken tostadas make for a fast and savory dinner that you can even make in a toaster oven for added convenience. This is just a sampling of what you can do as there are almost endless Mexican recipes and meals that you can create in your own kitchen.

Ingredients

  • Crispy Tortillas
  • Vegetable oil
  • Six white corn tortillas
  • Kosher salt
  • Chicken
  • Three cups shredded cooked chicken
  • fresh lime juice 1/3 cup
  • Olive oil 1/4 cup
  • chopped fresh coriander ¼ cup
  • Fresh black pepper
  • Tostadas
  • 2 15-ounce cans of liquid-drained and reserved pinto beans.
  • 1/2 cup white onion.
  • Dried oregano 2 tablespoons
  • 2 peeled garlic cloves
  • Ground cumin1 teaspoon
  • Extra-virgin olive oil
  • 3 ounces shredded Monterey Jack cheese
  • 1/2 head cored and shredded iceberg lettuce
  • 1 Hass thinly sliced avocado or guacamole
  • Two cups salsa cruda
  • 1/2 cup sour cream
  • 1 thinly sliced scallion
  • 12 fresh coriander leaves

Directions

Step 1 – To marinate your chicken, mix it well with smoked paprika, lemon zest, oregano and oil in a plastic bowl. Cover the marinated chicken with cling wrap and let it stand in your fridge for about 30 minutes.

Step 2 – To prepare the tortillas: Pour the vegetable oil to a large heavy bottomed pot (of about two inches.) Place the pot over medium heat of about 400ºF in your oven or toaster oven. Line the baking sheet with heavy duty foil. Mist the sides of tortillas using cooking spray. Place the tortillas on the baking sheet and bake them for about 8 minutes until crisp. Add your tortillas, each at a time, and fry for about 1 to 2 minutes till they turn crispy and golden brown. Using tongs, transfer them to a paper towel lined pan and sprinkle them with salt. Set your tortillas aside.

Step 3 – Meanwhile, make the almond sour cream: Combine chopped almonds, sour cream, lime juice and smoked paprika in a bowl, or blitz with your small food processor. Season the mixture with salt. The ingredients can be altered to the preferred flavor balance.

Step 4 – Prepare the guacamole: Combine coriander, avocados, tomato, lime juice and onions in a medium-sized bowl and mash the ingredients with a fork until you get the desired consistency. Alternatively you could blitz the mixture in a food processor for a smoother consistency. Season the mixture with salt, lime juice and chopped coriander.

Step 5 – To cook the chicken, heat one teaspoon of oil in a frying pan. When the oil heat, add your chicken and let it cook for about five minutes.

Step 6 – Going back to your tostadas, use a 15cm ring cutter and a sharp knife to cut out them out to circles. Place your deep frying pan to high heat and then add oil. When oil heats, add the tortilla and fry it till both sides turn golden. Remove the tortilla and drain it on paper towels. Do the same for the remaining tortilla rounds.

Step 7 – To prepare the beans, start by heating oil in a large saucepan with medium heat. Add the bean mixture together with 1/2 cup bean liquid. Stir it over medium low heat till warmed through. Add more of the bean liquid if dry, for about 5 minutes. Season with freshly ground black pepper and coarse salt.

Step 8 – Serving Suggestion: Like most popular recipes, people eat chicken tostadas with all kinds of toppings. For this meal we will take a tostada, shell it with beans, add one dollop of the almond sour cream, one tablespoon of guacamole and a small quantity of chicken. Finally, garnish with coriander.

Cook’s Notes

1. The tortillas should be fried till they turn very crispy; otherwise they become rubbery, which makes it difficult to cut them with a fork and knife.

2. Serve the chicken tostadas immediately, because they do soften.
